Hopefully dual specs will be coming soon, so he can be both tank and deeps. My plan is to dual spec Resto/Enhancement

No, I don't think it is. Possible the Ulduar patch.

I want to do PVP more than DPS. We'll see how everyone feels when dual speccing comes out.

After reading up on some gear and specs, I'm considering going tank sooner rather than later. It might be possible for me to spec full Blood or Unholy, allowing me to nab all tank talents with points left over for the dps ones, too.

Unholy is only more appealing for the Pale Horse. It will be sad if I have to be slower again. :) A 20% speed boost while mounted is very nice while doing dailies.
